Homemade Burgers

Ingredients:
    For 4 burgers:
  • Meat: 4 x 150 g
  • 4 bread buns 
  • 4 slices of cheddar cheese. Fried or fresh onions.
  • 6 tomato slices, 6 lettuce leaves, 4 Russian pickles
  • For the sauce:
  • 1 egg yolk, 1 tablespoon of Dijon mustard, 1/2 tablespoon of wine vinegar.
  • 35 cl of vegetable oil, 1 tablespoon of Savora, salt and pepper to taste.
Instructions:
    For the burgers:
  1. Wash and chop the lettuce, then slice the tomatoes removing the seeds
  2. Cut the pickles into slices or julienne them
  3. Toast the inner side of the bread buns by placing them on top of the grill
  4. Lightly salt the meat and cook the first side for 2 minutes. Turn the meat over and place the slice of Cheddar cheese on top. Cook for 2 minutes for rare meat
  5. Assemble the burger: put some sauce on the bottom slice of the bread bun; place the meat, onions, tomatoes, pickles and lettuce on it; then, add more sauce and top it with the top bread bun slice.
    For the sauce:
  1. In a salad bowl, place one egg yolk, the mustard and a pinch of salt. Whisk while pouring all of the oil in. 
  2. Finally, whisk vigorously to "stiffen" the mayonnaise and add the vinegar, also whisking. Stir in the Savora.
    Chef’s tip:
    You can keep homemade mayonnaise for 48 hours in the refrigerator vegetable compartment, to prevent it from separating.To vary the taste you can replace the Cheddar cheese by Reblochon or blue cheese. You can also replace the Savora with fresh herbs (basil, mint and tarragon).
