Buy deboned and skinless salmon fillet from your fishmonger. Cut into regular sized pieces. Mix sesame seeds, poppy seeds, green anise, salt and pepper together in a dish.
Prepare the batter, by mixing yolks with 2 tablespoons of olive oil, 1 tablespoon of water and season, brush only one side with this mixture and coat with the seeds. Cook them either on the griddle or on the grill, only on the spice crusted side, which is called unilateral cooking, and serve with a slice of lemon or a bit of orange butter.
